

It is the Traditional Young Red Wine, from the mixture of Listán Negro, Listán Blanco and Negramoll grapes. In its preparation, we respect some old practices such as open tannin maceration and fermentation in old oak barrels. Of ruby color with violet tones, aromas of truffle, blackberry, minerals and other indefinable characteristics provided by its varietal origin. In the mouth, it is intense, behaves with character and nerve, ending with a certain bitterness that makes it elegant and original.

I learned with my father Miguel Monje (1916-1999) the traditional production process of this unusual and characteristic wine: the mixture of the three grapes fermented in the old winery, the treading, the racks… I continue to respect the way of fermenting and aging in the old oak and chestnut barrels, because that is the family's personal stamp since 1750.
