My story
My first adventure as an oenologist was at the beginning of the 80s. The Listán Blanco grape came from the "Llano el Drago" plot in La Hollera, and I thought that this variety could give more than we already knew. I came up with a cooling system with showers in 60-liter jugs and the racking of the must. Meanwhile, my father, Miguel Monje, looked at me out of the corner of his eye: a "small wine", he said with doubts, that even his friends gave me the humorous title of "chemist". However, the expected change occurred and my father, friends and audience fell in love with the refreshing novelty.
