The process of raising under the sea gets in this wine more intense and mature aromas. The flavors are very well assembled and some tannins have been polished, making a very balanced wine as a whole.

I learned with my father Miguel Monje (1916-1999) the traditional production process of this unusual and characteristic wine: the mixture of the three grapes fermented in the old winery, the treading, the racks… I continue to respect the way of fermenting and aging in the old oak and chestnut barrels, because that is the family's personal stamp since 1750.
This Traditional wine arises from the collaboration with the Bodega Submarina de Canarias located in the south of the Tenerife island. This red wine is aged for five months at 18 meters depth and 2 natural bar pressure. The marine currents, algae and other fauna of the Atlantic Ocean manage to assemble and mature this particular wine.
