Spread: bread, watercress butter, almogrote and chorizo palmero, cheese shavings on sponge bread. Roast shoulder of pork roasted in a wood-fired oven*, accompanied by vegetable jam, almond mojo, lettuce and onion salad with our Macho Monje vinegar and wrinkled potatoes. Dessert quesillo with lemon.

Using the plant resources of La Hollera, the landscape surrounding Bodegas Monje, Nathalie Leturcq invites you to explore, experiment, learn with curiosity and respect to dye your own silk scarf, with a technique designed to surprise you with the sometimes unpredictable results offered by nature and the magical world of natural dyeing.
