This has been our house speciality for 25 years. In our wood-fired oven, the roasting is done very slowly to maintain all the flavour of the locally sourced meat.

Spreads: watercress butter, almogrote, chorizo palmero.
Watercress cream with gofio, cheese and onion.
The roast is accompanied with Dulce de verduras, Mojo verde de almendras, lettuce and onion salad with Macho Monje vinegar and Papas arrugadas.
Dessert, cream cheese with wine sponge cake and Hollera configuration.
Coffee or Infusion.
Drink, ½ bottle of young wine per person or, failing that, water, soft drink, juice or beer.

Our vegetarian menu offers dishes made using fresh, natural and healthy ingredients. Enjoy all the flavours of the garden in a creative and innovative way.

For starters, avocado tartar, then a vegetable stuffed aubergine and for dessert, Canarian papaya with local orange. Coffee or Infusion.

Spread: bread, watercress butter, almogrote and chorizo palmero, cheese shavings on sponge bread. Roast shoulder of pork roasted in a wood-fired oven*, accompanied by vegetable jam, almond mojo, lettuce and onion salad with our Macho Monje vinegar and wrinkled potatoes. Dessert quesillo with lemon.

Coffee or tea and three glasses of our young wines.

*As an alternative to meat, it can be replaced by fish or vegetables, depending on the customer’s needs.
